Sue Beaty
President
My name is Sue Beaty. My husband and I moved to Fulton in 1983 and raised our 3 grown children here. I retired from Fulton Preschool Association after 25 years as teacher and later also as director. I am a member of St. Peter Catholic Church and volunteer in several
capacities, as the school librarian, a member of the Knights of Columbus Ladies Auxiliary and part of the planning team for the annual rummage sale and fall festival. During the tax season, I volunteer at the senior center as a client facilitator for the AARP Tax Aide tax preparation program. My hobbies
include reading, sewing, playing pickleball and visits with my grandchildren. I am thrilled to be a part of Open Table and look forward to serving our guests. Open Table will be a wonderful blessing for our community and provide a helping hand by
offering a needed and nutritious meal in a welcoming environment.

Jeff Eldringhoff
Vice President
My name is Jeff Eldringhoff. I'm married to Jennifer with 2 step kids and 2 kids of my own. I'm a member of Saint Peters Catholic Church and the Knights of Columbus. I have
worked at the Callaway Nuclear Power Plant for 33+ years. My hobbies are farming with my dad and brothers and doing kids stuff. I'm looking forward to working with Open Table to help feed the community.

Alice Niemeyer
Treasurer
My family moved to Fulton in 1991 for my husband's employment. Both of my children graduated from Fulton High School. Prior to my retirement in 2017, I worked part time for 19 years as a tax
accountant for a local CPA firm. Attending and volunteering at my children's activities was
not only enjoyable but allowed me to meet the community. I attend church with my family at St.
Peter's here in Fulton. For the last few years, I have helped with the Food Pantry at Court Street Methodist Church. Prior to that, I
cooked and served meals at the previous soup kitchen. Getting Open Table started will be a great blessing for all. I am anxious to be able to serve those meals again and feel blessed that I can participate in this much needed project.

Shirley Dixon

Hi! My name is Shirley Dixon. I am retired from teaching at the elementary level for 26 years.
Following my retirement from teaching, I began working for SERVE, Inc. This was a dream of
mine for quite some time, especially since my church, the First Presbyterian Church, was one of the founding churches. I retired from SERVE after 8 years, and am now volunteering my time and also
subbing with the HiSET program, helping people attain their GED's. I enjoy this immensely! I also enjoy serving my church as the chairman of the Worship Committee and serving on the Session. In my
free time, I love to play cards with two different card groups, play dominoes with another group, participate in the Millersburg Ladies' Club, and enjoy reading and
counted cross-stitch. The Open Table is very important to me because I helped with the original Soup Kitchen and saw first-hand what a blessing it was to the guests we served. I am so excited to be a part of this ministry again!
